Made with juicy chicken meatballs, tender orzo pasta, and fresh spinach, this soup is packed with flavor and nutrients. The best part? It’s super easy to make on a stovetop!  Simply sauté onions, carrots, and celery in olive oil, add chicken broth, and let everything simmer until happy. Then, mix in the mini meatballs made with ground chicken, and let them cook until they’re heated through. Finally, add the orzo pasta and spinach, and let them cook until the pasta is tender and the spinach is wilted.

Ingredients – Meatballs

  • 1 lb. ground turkey
  • 1 cup spinach, chopped
  • 3 Tbsp coconut flour
  • egg
  • 2 Tbsp fresh parsley
  • 2 Tbsp fresh basil
  • 1/4 tsp pepper
  • 1 Tbsp olive oil
  • 1 tsp garlic, chopped finely

Instructions – Meatballs

Step 1

Preheat oven to 450 degrees F

Step 2

In a bowl mix together all ingredients for meatballs until combined.

Step 3

On a lined cookie sheet lined with parchment paper, drop 1/4 inch round meatballs. They can be close together as they do not spread.

Step 4

Bake meatballs for 10 minutes, until golden brown.

Ingredients – Soup

  • 1 Tbsp oilve oil
  • 1/2 Tbsp garlic, finely chopped
  • 1/2 cup onion, chopped
  • 2 cups carrots, sliced into small circles
  • 1 Tbsp fresh rosemary, finely chopped 
  • 2 bay leaves
  • 1/4 tsp pepper
  • 1/8 tsp red pepper flakes (optional)
  • 64 oz. low-sodium chicken stock
  • 2 cups spinach, chopped
  • 2 cups any pasta

Instructions – Soup

Step 1

While meatballs are cooking, heat olive oil in a large pot. Add onions, celery, garlic, and carrots. Sauté for 5 minutes until onions start to soften.

Step 2

Add cooked meatballs, remaining spices, pasta and chicken stock to the pot. Do not add chopped spinach. Cook 30 minutes.

Step 3

Once soup is cooked, stir in chopped spinach.
